What’s up lately

Can you believe it is the last week of February already? I don’t know if it is because I want time to slow down during my son’s senior year, or what, but seems like time has gone faster than ever before in 2025.

But here we are in the last week of February, so it is time to link up with Shay and Sheaffer, as well as Sarah and Holly, for a little life update about what’s going on here in our lives.

What we’ve been up to

After all the crazy flooding a week ago, my husband was able to get to the grocery store on Monday to pick up a few things before the snowstorm on Tuesday night. Otherwise, Monday was a run of the mill day filled with a full day of work and school.

Apparently someone told one of my sons that the public schools were closed for President’s Day, and he thought that was a good idea. Don’t feel too sorry for him – we take off plenty of days when the public schools are in session to do all kinds of fun things without any crowds.

On Tuesday, I worked in the morning and then took off early to assist my in-laws with some computer related tasks. I’m thankful we are able to live nearby. We moved to Kentucky almost 9 years ago in order to live close to my husband’s parents, and it has been such a blessing for us all.

We did get a couple inches of snow overnight Tuesday, and all the activities on Wednesday were cancelled except our Azure Standard pickup. If you aren’t familiar with Azure Standard, they are a direct to consumer company that offers high quality organic groceries along with many other products. They ship orders out monthly by semi and you meet the semi at a drop site to get your order. I purchased organic avocado oil and organic butter this month, plus tried out some “Kamut Puffs” for the first time.

Azure Standard is my favorite source for organic popcorn kernels, organic butter, organic oats and more.

Thursday, Kevin and Aiden weren’t feeling well, so we cancelled piano lessons we normally have that day. We also had to delay our plans to celebrate Kevin’s birthday with a dinner out with his parents. Cade made Kevin a batch of homemade cookies. Aiden bought him an ice cream cake from Dairy Queen, and I bought him a box full of these chips made from organic nixtamalized corn:

Friday morning, Cade woke up not feeling well. He takes an English class with about 10 other homeschooled students on Friday morning, so he had to miss class. This was also the week for our Friday afternoon homeschool group, but we had dissection planned as an outdoor activity and elected to wait for a warmer day. So Friday was mostly a “get things done around the house” day after I worked the morning and ran a couple of super fun errands like paying our car taxes.

Saturday morning, my sister-in-law Amy messaged me that my niece made a surprise trip home from where she works in North Carolina. We wanted to see her while she was home, so we spent the afternoon at Amy’s house along with Kevin’s parents and aunt. I used what I had in the freezer and pantry to bake a little treat to take to share. I pulled out a gallon of raspberries I’d frozen from what my mother-in-law shared last year out of her garden, and made this Almond Berry Crumble recipe (I used just raspberries instead of mixed berries). It doesn’t have any refined sugar (only maple syrup) and is a bit tart, but I really liked it.

Sunday, we went to church and then spent a relaxing day at home. I listened to an audio book and did a little bit of food prep.

  2. hehehe! You have to admire your son trying to get out of learning at home when it was a holiday.
    So sorry everyone was feeling unwell and your plans had to change. I hope everyone is better now.
