Peach fruit roll-ups

This healthy homemade peach fruit leather recipe could not be easier to make. The copycat peach fruit roll-ups taste amazing, and are portable for an easy on-the-go treat.

Can I use fresh, canned or frozen peaches to make fruit roll-ups?

Yes, yes and yes! I’ve made peach fruit roll-ups from fresh peaches, canned peaches (both home-canned and store-bought) and frozen peaches. They all taste great and the recipe is essentially the same.

When using fresh fruit, add a little lemon juice or a little citric acid to prevent discoloration and remove the peach skins. Fully ripe peaches work best for to get the wonderful flavor of the fruit.

If using canned peaches, drain the majority of the juices to have a thicker mixture and shorter dehydration time. If you want to limit the sugar content, check purchased peaches of any form to see whether sugar was added.

Should I refrigerate homemade fruit roll-ups (fruit leather)?

As long as you are using your fruit roll-ups within a couple weeks of making them, they may be stored in a closed airtight container without refrigeration. For longer storage, use the refrigerator or the freezer.

Do I need to use parchment paper on my dehydrator sheets?

I’ve found that placing the fruit roll-up mixture directly on ungreased dehydrator trays works best. I have used a piece of parchment paper and wax paper, but even if I grease it with some oil or cooking spray first, the fruit leather often sticks to the paper so badly it cannot be peeled.

I’ve also tried applying oil or cooking spray to the dehydrator sheets, and haven’t found it to make peeling the fruit leather from the tray any easier. A silicone mat (the kind with a little rim) or cookie sheet also are a good options.

I recommend not spreading your fruit roll-up mixture too thin; about an eighth inch thickness or slightly more produces a final product that is the easiest to peel in a single sheet.

How do I slice the homemade fruit leather rolls?

Slice and roll your finished fruit leather using one of these easy options:

  1. Scissors – use clean scissors to cut the fruit leather into strips
  2. Pizza cutter – place the fruit leather on a cutting board and roll the pizza cutter to cut strips
  3. Sharp knife – similar to the pizza cutter, use a clean, sharp knife to slide the fruit leather into strips or squares
  4. Tear it by hand – it won’t look as tidy, but you can get the job done

What tools are needed to make homemade peach fruit roll-ups?

  • Blender or food processor: I switched to this brand of blender a couple years ago, and the consistency of my fruit leather mixture dramatically improved – a good blender is super important to get a smooth fruit puree.
  • Food dehydrator: I’ve only ever owned a Cosori (an older version of this model) – I highly recommend it.
  • Fruit leather trays: the Cosori comes with one, and I purchased two additional. This recipe makes enough for 2 trays.
  • A spoon or a spatula

Pour half of the peach mixture onto each of two clean and ungreased dehydrator fruit leather trays. If using the oven instead of a dehydrator, pour onto a stainless rimmed baking sheet.

Place in the dehydrator at 135 degrees for 12 hours for the drying process. Use your finger to check that the fruit roll-ups are dry. They should not have any moisture when you touch them. Mine are usually done after 12 hours. Continue to dry in one-hour increments until dry.

If using your oven, set it to the lowest oven temperature option, and start checking it after 4 hours. It should take closer to 4-6 hours depending on the temperature.

Finished Peach Fruit roll-up

Peel the fruit leather from the tray and cut into strips (scissors make this easy). Roll each strip and enjoy!
